Tis the season for pumpkin spice! If you’re like me, you await this season all year, then bring out the Fall decor in early September to maximize the enjoyment of all-things-pumpkin. That being said, I’m well into my seasonal traditions of Fall-spectacular!
I want to take a moment to promote the health benefits of pumpkins in general. This “squash guy” is not only a bulbous and bright sphere of happiness, it’s nutrients are impressive.

In the interest of overall wellness, I try to reduce sugar as much as possible while still enjoying seasonal items. Pumpkin spice is a great addition to lots of items like coffee, oatmeal, or baked goods…..it has a nice, warming flavor, even without adding sugar. I’ve perfected this muffin recipe for a quick and easy breakfast—simply serve one alongside some fruit for a complete meal. It includes protein, fiber, “good” carbs, and lots of health benefits. Some of the ingredients like pumpkin, chia seeds, oats, and flax are considered superfoods due to their high density of nutrients. Here’s some benefits you’ll enjoy from the pumpkin spice muffins:
Benefits of Healthy Pumpkin Spice Muffins
Essential vitamins and minerals—magnesium, potassium, zinc, vitamin B
Healthy fat—omega 3 reduces risk of cardiovascular disease
Fiber—improves digestion and helps maintain healthy weight, improves gut health
Beta Carotene—improves eye health, skin, and immune system
Antioxidants—lowers risk of cancer
Healthy Pumpkin Spice Muffin Recipe
2 1/2 c. oats
1/4 c. ground flax
1/4 c. chia seeds
1/4 c. almond flour
1 c. pumpkin puree
2 eggs
1/2 c. maple syrup
1 c. almond milk
1 1/2 tsp. baking soda
1 tbsp. pumpkin pie spice
3/4 tsp. salt
1 tsp. vanilla
2 tbsp. coconut oil
1/2 c. mini chocolate chips
First, blend the dry ingredients in blender to make a course flour. Then, add the rest of the ingredients except for the choc chips. Mix well. Stir in the choc chips. Line a muffin pan with muffin liners and pour batter in, fill to almost full. OPTIONAL: top each muffin with turbinado sugar. Bake at 375 degrees for 24 minutes. ENJOY!
