We love this recipe as it has many “superfood” ingredients—lots of nutrient density. It’s also the perfect combination of sweet and salty, and makes enough to last a few days.
Did I mention it is delicious with your morning coffee? Oh heck YES!
And it makes for an easy breakfast since it does include fruit, grain, and protein. Also REALLY great as a pre-workout snack for lots of energy.
Ingredients Include:
Oats
Honey
Peanut Butter
Coconut Oil
Salted Peanuts
Gogi Berries or Raisins
Dried Apricots

Simple Instructions:

2 1/2 c. oats
1/2 c. salted peanuts
1/2 c. dried gogi berries or raisins
1/2 c. dried apricots
1/4 c. honey
1 c. peanut butter
1 tbsp. coconut oil
Plastic wrap and parchment paper
Melt peanut butter, oil, and honey in the microwave for 45 seconds. Combine all ingredients, stir together in large mixing bowl. Squish mixture into a long roll on a piece of parchment paper. Wrap the parchment paper around the roll and then wrap tightly in plastic wrap, twisting the ends. Freeze the roll for 3 hours, then slice into 1/2 inch slices. Store the sliced granola bites in an airtight container in the fridge. Makes about 12-14 slices. ENJOY!
